David Carter is the founder of the barbecue place Smokestak, which formerly started as a food truck back in 2013 and later got established into a proper restaurant. The food truck-cum barbecue joint was not what Carter started at his lowest. To begin with, his business was a hit starting from the beginning.

David Carter is a chef from London who specializes in barbecue glazed dishes. His strongest suit in dishes includes slow-smoked beef brisket buns, charred pig belly ribs, and crispy ox cheeks, and most of the food he offers is meat-based. Rather than being guided by recipe books, he prefers to play with the ingredients and see the magic happen.

A more proper introduction to Carter entails his widely known restaurant businesses; Smokestak and Manteca. Manteca is a restaurant Carter owns in collaboration with chef Chris Leach. Manteca specializes in whole-animal butchery, hand-made plates of pasta, wood-fired slices of bread, and their in-house salumeria. In contrast, Smokestak is a barbecue restaurant that priorly started as a street business. 

The street business was a formative experience for the career Carter owns now. Seeing street food vendors hurrying to make their cuisine and compete with some renowned restaurants in terms of product quality was an adrenaline experience for him, to the point that drove him to the success of two luxurious restaurant businesses now.

A Glimpse At The Career Of David Carter

Carter’s career encompasses his leap from working for others to establishing businesses of his own. From the beginning of his career until now, Carter  believes that it was always him being in the right place at the right moment. 

It was in 2006 that Carter began his career as an assistant manager at the Four Seasons Hotel Los Angeles at Beverly Hills. Avi Haksar, the food and beverage director at the time, served as his mentor there. Under the tutelage of Avi Haksar, Carter learned many things that still shape him today. 

After that, in 2008, Carter joined Gordon Ramsay at Claridge’s as an assistant manager. He worked there for two years under the mentorship of its then restaurant director, Yishay Malkov. Carter said in an interview with Financial Times in 2021 that his mentors, Avi and Yishay, were the ones who believed in him more than he believed in himself.

In a similar manner, Carter  began managing Savoy Grill in 2010 before moving on to become general manager of Roka Canary Wharf in 2011. Carter ‘s “working for other” era came to an end at this point. In 2013, he started his own food truck business, Smokestak. After only three years, in 2016, he transformed it into a restaurant.

Now, Carter  is a proud owner of two restaurant businesses, Smokestak and Manteca.

His career stems from his academic bachelor’s degree in commerce, hospitality, and tourism management which he received from Ryerson University.
